Carmelite water is one of the most famous concoctions made of lemon balm. Its recipe was created by Carmelite nuns 16th century.
The recipe was and still is kept secret since it’s creation and is passed down from a generation to generation amongst the nuns.
The original recipe is unknown but it is believed that it contained 9 spices and 14 medicinal plants : melissa, lily of the valley, angelica, lemon zest, chamomile, watercress, marjoram, lavender, sage, cowslip, rosemary, Artemisia, thyme, angelica root savory, cinnamon, coriander, Gentiana root, green anise, clove, nutmeg, fennel, and sandalwood.
It is a medicine for treating increased heart rate, anxiety, depression, fear and nervousness, migraine, impaired memory, tension, fatigue, night chokes and fainting.Also, it is used for massages and perfumes.
There are lots of different recipes for homemade Carmelite water. Here is most popular recipe:
- One liter of alcohol (40% vodka)
- 165 gr. of dried lemon balm flower tops
- 40 gr. of organic lemon peel
- 5 gr. of angelica root
- Close the bottle tightly and leave it in the shade for two weeks. Shake it every day. Strain through a cloth then add these spices to the alcohol:
- 65 gr. of coriander
- 12.5 gr. of cinnamon
- 12.5 gr. of ground nutmeg
- 1.5 gr. of clove
Close the bottle tightly and leave it in a shade for another week. Then filter the mixture and keep it in a glass shaded bottle. Take one or two spoons a day before breakfast.

According to the Food and Drug Administration (FDA), Frosted Flakes cereal and Pop Tarts are healthy foods, but foods containing large amounts of nuts are not. However, the FDA might be changing its tune.
All fats are not created equal.
Currently, in order to use the term “healthy” on a product’s packaging, the product in question must not exceed three grams of fat. However, this means products like almonds and avocados, which both have enormous health benefits, would be considered, “unhealthy” by the FDA’s standards.
Embrace the Fat
Due largely to government diet guidelines issued in the 70s, “low fat” diets became a huge trend in the 80s and 90s, as many believed that fats found in food were responsible for weight gain. In the past several years, scientific advances have cast doubt on this paradigm, to say the least. Even Time Magazine recently ran a cover proclaiming, “Eat Butter. Scientists Labeled Fat the Enemy. Why They Were Wrong.”
Not all fats are created equal. For example, the fats found in foods like nuts and avocados are incredibly healthy for you. However, thanks to the FDA standards, these healthy fats cannot be marketed to consumers as “healthy” products.
Given what we now know about fats, the FDA is considering revising its definition of “healthy.” The catalyst for this change is the company KIND, whose gluten-free bars contain large amounts of nuts, thus making its fat content too high to be deemed “healthy” under current FDA standards. The company would like to market its products as “healthy,” but have been unable to do so.
Fats found in foods like nuts and avocados are incredibly healthy for you.
The Great Label Debate
After the FDA reprimanded the company for putting “healthy and tasty” on their labels, KIND pushed back. After receiving a complaint from the company, the FDA decided it might be time to make some changes to their definition of “healthy.”
“We are pleased that the FDA is looking into” revising its definition, says Daniel Lubetzky, the CEO of KIND bars.
Other health experts have chimed in on the “great fat debate” as well. Thomas Sherman, an associate professor at Georgetown University, who teaches courses to medical students on nutrition, said, “Nuts have healthy fats … that we know are good for cardiovascular health and mental health and are good sources of protein.” He continued, “Nuts are a wonderful component of our diet.”
Although this is certainly not the first time government science has been found to be inaccurate, one thing that is certain, the FDA’s current definition of “healthy” is absolutely nuts.

European Union leaders are actively pursuing “the creation of EU military structures and possibly European nuclear armed forces,” German Foreign Policy reported.
In November, the European Parliament adopted a resolution urging “the EU to establish ‘multinational armed forces,’ in which ‘all member states’ should participate in one way or another” (ibid.). The combined military force would be “capable of independently waging wars” and would act on the interests of the EU instead of NATO.
According to German newspaper Frankfurter Allgemeine, adopting the resolution could prompt Germany to develop an arsenal of nuclear weapons as “the French and British arsenals…would be insufficient” to meet the EU’s needs.
“Europeans need to come up with a strategy of their own,” Wolfgang Ischinger, chairman of the Munich Security Conference and former German ambassador to the United States, wrote in an article he contributed to The New York Times. “The challenges are tremendous—and it is in Europe’s self-interest to speak with one voice, and to be a more credible and capable actor in regional and global crisis management. For that, Europe needs to invest more in civilian and military capabilities, and to start pooling and sharing defense assets more comprehensively.”
During a speech in Brussels on future NATO-EU relations, EU High Representative for Foreign Affairs and Security Policy Federica Mogherini promoted the resolution by stating that the power bloc “can only succeed in providing security to our citizens if we work together as a true union, with the full potential of a super power, in the field of security and defense.”
THIS type of bread is easiest to digest and better for blood sugar than most breads
Bread gets a lot of bashing these days, especially in light of ‘low-carb’ or Paleo diets. And there is good reason for it—bread (even whole grain bread) contains gluten, and contributes to inflammation in the body–especially the gut, and even the healthier ‘whole grain’ versions of bread can increase the blood sugar levels dramatically. Gluten free bread is just as bad or worse, with its highly refined grains and starches. However, one particular type of bread is far healthier and easier to digest and it’s been around for centuries.
Sourdough bread is made in an entirely different way than commercially prepared breads and gluten free breads. Sourdough is a fermented bread, which makes it easier to digest and less likely to spike blood sugar levels. Sourdough bread is actually one of the oldest ways of baking bread, and is thought to to have been prepared and baked in ancient Egypt around 1500 BC. Sourdough bread is still hugely popular in the Mediterranean and Middle East, as well as the San Francisco area of the United States.
Most breads use baker’s yeast to help the dough rise, but traditional sourdough recipes use ‘wild yeast’ and lactic acid bacteria. Lactic acid bacteria is the same type of beneficial bacteria found in fermented foods such as yogurt, pickles, kombucha, sauerkraut and kimchi.
Sourdough uses a ‘starter’ made of fermented wild yeast, lactic acid bacteria, flour and water. The sourdough starter begins to ferment the sugars in the dough, changing the molecular structure, and breaking down its components, creating lactic acid and lactobacilli.
More Nutrition in Every Slice
Phytic acid is a substance in nuts, seeds and grains. Phytic acid or phytates are considered ‘anti-nutrients’ because they bind with minerals such as calcium, magnesium, iron and zinc, making them unusable in the body, creating mineral deficiencies in those who eat large quantities of nuts, seeds and grains. This is especially true for vegetarians and vegans. It also binds with niacin, creating a B-vitamin deficiency called pellagra, which is especially noticeable in developing countries.
Probiotic lactobacilli contains the enzyme phytase, which breaks down phytic acid, making the sourdough bread easier to digest, and rendering the nutrients and minerals easier to utilize in the body. This study shows sourdough bread fermentation reduces the phytate content by 24-50% over conventional yeast bread. Studies show that the lactic acid in sourdough can actually release more antioxidants during fermentation. Sourdough fermentation also tends to increase the folate levels in the bread as well.
Because of its natural fermentation, sourdough also possesses a variety of bioavailable nutrients. It is rich in B vitamins, B1, B6, B12, folate, thiamin, niacin, riboflavin, vitamin E, selenium, iron, manganese, calcium, magnesium, phosphorus, zinc and potassium, along with its well balanced proteins and fatty acids. By contrast, many commercially prepared breads are so low in nutrients, that less-than-desirable synthetic ones are added back in.
Easier to Digest Even if Gluten-Intolerant
Many people are gluten sensitive or gluten intolerant. This means they are sensitive to the gluten molecule or protein in most breads. When sourdough bread is fermented, the fermentation process helps to dissolve the proteins and peptide bonds in the gluten. The enzymes in the bread dissolve albumin, globulin, prolamin, and glutalin. These enzymes also produce a type of alcohol that will dissolve water-insoluble protein bonds. This breaking down of these proteins means that gluten sensitive people are often able to eat sourdough bread without a reaction. While gluten tolerance varies from person to person, those with true celiac disease should probably still avoid sourdough bread-if made from wheat. Gluten free sourdough is an option however, for those who are extremely sensitive to gluten.
Keep in mind though, that not all sourdough bread is made the same way, and depending on how long it ferments, and how long it is kneaded, can make the difference between a tummy ache from gluten and no tummy ache.
[I have genuine celiac disease and am pretty sensitive, but when traveling overseas, I have found I have been able to eat bread from Peru, some parts of Europe and Nepal, so I may have to try this out and see what happens].
Better Blood Sugar Control
One of the big negatives about eating regular bread, even the ‘whole wheat’ or ‘whole grain’ variety, is the blood sugar effects. People are often shocked to hear that whole wheat bread increases blood sugar to a higher level than sucrose does. In fact, eating two slices of whole wheat bread is not too different than eating a candy bar!
The good news is that sourdough bread may have a better effect on blood sugar and insulin levels than whole wheat bread, though the reason for this is not yet fully understood. Researchers theorize that the fermentation process must alter the carbohydrate molecules, which in turn slows down the speed at which the sugars enter the bloodstream. Several studies compared the glucose response of participants with sourdough bread and regular bread with baker’s yeast. Participants showed lower blood sugar and insulin response overall with the sourdough bread.
Make Your Own Sourdough
Much of the sourdough you buy in stores is not genuine sourdough and therefore will not contain the nutrient benefits that real sourdough contains. You can easily make your own sourdough at home, but remember it takes time to produce a high quality sourdough starter.
Once you have your starter, you ‘feed’ it daily and let it grow for 5-7 days. Do not rush this process. Here are a few sourdough bread recipes from various websites:
